In this video, Betty and Rick demonstrate how to make Rotisserie Chicken on an outdoor grill. The chicken is seasoned and placed over a heated grill, rotating until it is done. The meat is tender and juicy, and this is a great alternate to regular grilled chicken.

Ingredients:

one 4-pound chicken
extra virgin olive oil
freshly ground sea salt
freshly ground black pepper

Open the bagged chicken and remove the giblets from the inner cavity. The giblets are not used for this recipe. Rinse the chicken in clear water and place in a container that is large enough for you to season the chicken. Trim any excess fat from the chicken (although some fat is good for basting the chicken as it cooks). Pour olive oil over the chicken and spread it with your hands all over, including the inner cavity. Grind sea salt and black pepper over the chicken, and rub it over all parts, until the chicken is well-coated with olive oil and salt and pepper. Now, place the chicken on the spit, which fits on your grill. Place the spit on the grill, when the temperature of the grill is about 350 degrees. Turn on the switch to make the spit rotate. Close the grill and cook 1 ½ to 2 hours, or until the internal temperature is 175 degrees at the thickest part of the meat. (Note: The chicken is not cooked over direct flame; it is cookeby by indirect heat.) Remove from spit, carve as desired, and place on a nice serving platter. Serve immediately. We hope you enjoy this Rotisserie Chicken! Love, Rick & Betty ♥♥♥♥♥

  • Betty, nice job in the video. Why are you counting calories...seriously. Rick that chicken turnd out very nice and the vidoe was very helpful but more info would be good too. Basting? How often? Temp settings? I see you used foil? By the way, my wife loves your kitchen. Thanks again folks.

  • @101Traveler1 I like to stay slim, so I do try to watch my calories. Rick basted the chicken every 5 minutes or so. Thanks for your lovely comment!

  • This is so helpful!! I wanted to make the engagement chicken recipe -- we're already engaged, so I'm just trying to speed things up :) -- but was completely intimidated by the directions "remove the giblets from the inside of the chicken" and "clean the chicken". Now, I'm going to go full force!! Thank you so much, Betty and Rick!!

  • @cardiganmimi You are very welcome! Thanks for your sweet comment, and good luck with your dinner!

  • you could make gravy with the giblets

  • That's a strange contraption, not a grill.

  • @KissHope I have never thought of having pizza on the grill, but I'm sure that would be good! I'm sure you're looking forward to having a grill after you move!

  • @bettyskitchen

The only thing not good on a grill is a donut. Have you ever done pizza on the grill Betty? I really like it but it is pizza afterall so what's not to like. Thankfully when I move late fall this year I will be living in a house and it's grill time even in winter. ha ha ha

  • @izzy123bell Thanks!

  • @KissHope We love grilling. We haven't shown the rotisserie much, but it is always fun to do a meal like that!
