Cool vid! Although you can cool it faster by carefully putting the pressure cooker in iced water, or pouring cold water on top (in the sink, of course).

@kaydengreyleaf You probably had ropa vieja in Spanish restaurants, because ropa vieja came to Cuba with Spanish immigrants from Spain's Canary Islands. Ropa vieja originated in the Canary Islands of Spain.

You could probably make this with much less work, yes. But, this takes a lot less than 3 hours to make which may be a bit easier when coming home after work. This is one of my favorite dishes. I have had it in many Spanish restaurants which probably take shortcuts like the one you mentioned. But, my mom's recipe is by far the tastiest. Give it a try one time and let me know.
