What went wrong was that you should have used about a 1/2 of cup of Corn Syrup It makes a hard crunch that sticks to the apples. I've tried it and it worked for me :)

I´m pretty sure the cristallisation in your pan is the reason the unproper sugar .. one should take away the cristals.. when it boils there have to be none left - take care of those at your termometer ! however, it causes the sugarmass to become either grainy or sticky (if mixed with cream) and addicted to the water in the air.. everybody knows what happens to a candy when it rains - it melts..especially if you put them into the refrigerator unwrapped - water all around ,\

semi freeze the apples so the coldness will harden the carmel faster

i think semi freezing them will do the trick before dripping so it hardens faster

i just made the brittle it was delicious... i modded the recipe and combined it with alton browns by toasting the seeds before hand with cinnomon and some hot pepper powder.... super good and dynamic

I love chocolates that are brittle they make me eat a lot more than regular ones.

I don't know if you've solved the problem already but could it have been the ambient humidity that day? If it was too humid that day, the caramel may have been too watery from absorbing extra moisture from the air, thus sliding off the apples. Try using a little less water in the recipe to make it stickier perhaps?

I had exactly the same thing happen last fall when I tried to make my own caramel apples. I hand made the caramel, put it on the apples and in the morning it was all pooled up underneath. I too picked my own apples from a tree so I dont think they were waxed (other than a natural wax maybe?).
ehm.. i think i know what's went wrong with your candy apples. ehm... did you was them? if not.. there you have the problem. cuz it's wax on the apples and if you dont was and dry the apples the wax will make sure the candy wont stick to the apples.

Dawn soap will remove the wax from the apples well when washed. Then dry the apples well.

You guys are adorable! The wax coating on the apples needs to be completely removed and totally dry after washing . I saw some other video where they quickly immersed the apple in boiling water to remove the wax. I haven't tried it though. Also, the apples should be at room temperature.
