Also known as a Mexican potato or a yam bean, Jicama is a favorite in Mexico and has become a favorite vegetable throughout Asia and is often substituted for fresh water chestnuts. The flesh is crunchy and juicy-crisp with a mild sweetness. Great in salads and as a healthy snack for kids. Does not turn brown from oxidation when sliced! Can be eaten raw or cooked. Perfect sliced into salads or grated into slaws. Dice into ceviches, stir-frys or sauces. Julienne into sticks. Perfect for veggie platters or dipped into dressings, salsa, guacamole or yogurt dips.

Jicama-Carrot Salad
2 cups peeled, cubed Jicama
2 carrots shredded
1 stalk celery, sliced
1/2 cup crushed pineapple, drained (reserve juice)
3 Tbsp. coarsely chopped walnuts
2 Tbsp. raisins
1/3 cup mayonnaise or salad dressing
In a salad bowl toss together the Jicama, shredded carrots, celery, drained pineapple, walnuts, and raisins. Stir together the mayonnaise and 2 tablespoons of the reserved pineapple juice. Spoon dressing over salad, tossing to coat well. Chill till serving time. Makes 5 servings.
