Colleen Cleeks Signature Dish from Hell's Kitchen. Yes, long before she prepared this dish for Gordon Ramsey, it was a huge hit at The CLASSY GOURMET. Part 3 of Southwest Chicken Enchiladas with Poblano Cream Sauce. The CLASSY GOURMET SHOW with Colleens Signature Dish from Hells Kitchen, Southwest Smoked Chicken Enchiladas with Poblano Cream Sauce and Mango & Red Onion Salsa. Yes The DIAPERS.
If Chef Ramsey would have had a broiler/salamander Id have been in business. O well I know the dish is first class. Watch and give a try.. the recipe is on www.theclassygourmet.com. Be sure to catch SHOW 4 parts 2 and 3 to finish the dish.

if you watch the other parts of the video, you can see why the components of the dish taste so bad. She makes a sauce with pepper and chicken stock, talk about gross. She smokes the chicken until it is dried out and then burns the cheese. Thanks for the laughs and a lesson on how not to cook, i will remember this for future reference.

I like her teaching style, but that dish did look like shit. Burnt cheese, followed by cold grated cheese, and completed with a sloppy dump of sour cream on top. Her only passion is making herself look good, not for food

Coleen seems to be a lot different from Hells Kitchen.
Honestly, I would not mind tasting that dish, it actually looks good!
Aaand I dont get why Coleen didn´t present that at the signature-dish tasting in Hells Kitchen :D

Plus, her cooking fit those whom has allergies to Wheat, gluten, lettuce, eggs, yeast and environmental allergies. Which are the allergies which Colleen has. Way to go Colleen.

I like Colleen very much. I think if she call her show, Home Cooking, it would fit her. Her cooking is a 'Happy Land' or 'Alice in Wonderland', not my type. But her attitude motivates me to cook more at home. Trust me.
