Chef Remy toasts rice grains before adding water to boil. This method adds another layer of taste to the most basic of several rice recipes that follow. There are several other methods for cooking basic white rice. Steaming white rice will also be shown in another video. Here it is stressed that the first 10 minutes cooks the rice but another additional 10 minutes (after turning down the heat) is required to absorb the water. Less stirring produces a rice that leaves the grains separate whereas more stirring makes the rice lumpy.
INGREDIENTS:
1 cup white rice
2 cups water
½ tsp salt
1 Tbsp. vegetable oil
METHOD: In a pot with a tight fitting lid, heat oil using medium high heat. Add rice and stir it to coat every grain. Continue to heat the rice until the grains show a change in color (such as turning partially translucent). Add the water and bring it to a strong boil while stirring. Turn the heat down but keep a boiling state. Continue to boil for 10 minutes while stirring occasionally. Water will almost be completely absorbed. Turn heat down to very low and cover. Rice should be ready after 10 minutes while covered; all the water should be absorbed. At this point, you need to stir up the cooked rice with only a two prong fork to separate the grains from each other. If still lumpy, use a little less water next time, such as 1 ½ cups of water. Keep the lid off; this helps keep the grains separate. Here's a couple of tips: Washing the raw rice makes it less likely to be lumpy because there is less starch in the cooking water. Run tap water through the raw rice while containing it in a sieve. Try using half water and half chicken broth to add another layer of taste to the rice. Also, add tumeric or even a product called Bijol Condiment (see www.bijol.com) to change the color of the rice to a nice yellow.
