I LOVE this recipe and have used it several times to impress my Argentine relatives!! Question...can I prepare dough, put in the filling, keep the empandas in the fridge over night then fry the next day? OR do I need to fill right before frying?

@cindiemormon I'm glad you loved this recipe!!! As for your question, I have made the empanadas and put them in the fridge the day before and up to 24 hours before I fry them up. Feel free to prepare the empanadas ahead of time.

i have the dough in the freezer, how long do i have to wait for when i take it out and am ready to start making my empanadas

@katdua77 I don't usually keep the dough in the freezer long. I leave it for 30 minutes to an hour. When it becomes firm then you take it out. If you store it in the freezer, I would suggest you thaw it in the fridge and then work with it once it becomed soft enough to work with. Best of luck!!

The vinegar is to make the dough softer. I have tried it without the vinegar and it really does come out a bit tougher. As for flavor, I don't think it makes a big difference without the vinegar. I hope you try this recipe and enjoy it!!! All my best--

@SuperJojo918 I've never left the dough in the fridge for more than 3 days. I can't say how much longer it will keep, but after three days it should still be fresh. All my best -- Vicky O.
