In the summer of 2007 we filmed, in detail, the daily routine at a mountain smallholding.
In this clip, our hostess shows us how she makes cows cheese.
The curds are picked out onto a canvas, lightly kneaded and crushed by hand, and the whey trickles out onto cheese pressing table (known as a krinta). The curds are placed into a mould (kava, káva), and compressed with stones. The leftover whey is used to make the whey cheese known locally as Orda, or simply fed to the pigs.

Vendéglátó háziasszonyunk ezen a videórészleten a tehén sajt készítést mutatja be.
A beoltott tejből vászonba szedik az alvadékot, kézzel kissé gyúrják, megtörik, majd a savót kicsurgatják a sajtnyomó asztalon (krinta). Keretbe (kava, káva) teszik és kővel lenyomatják. A felfogott savóból ordát főznek, vagy rögtön a disznóknak adják.
