I make a block of vegan cheddar "cheese" using the Chedda Cheez variation of the Colby Cheez recipe from the Ultimate Uncheese Cookbook.

Ingredients:
1 1/2 C H20
5 tbs agar flakes
2 tbs tomato paste
1/2 C raw cashews
1/4 C nutritional yeast
3 tbs lemon juice
2 tbs tahini
2 tsp onion powder
1 tsp salt
1/4 tsp garlic powder
1/4 tsp dry mustard

  • 2 questions: How does it taste? Similar to dairy-based cheese? I`ve been a vegan for 2 months now and I`m interested in making a pizza. 2nd question, does it melt? Oh and great vid :D I didn`t even know this was possible. Thanks!

  • @Nattielockx I only made this a couple time a few years ago. I think it tasted okay and no it didn't melt. It's much easier to just buy Teese or Daiya (we didn't have those back then, lol) now. Making your own vegan "cheese" is just kind of a fun thing to do, not really a depending on it type of thing.

  • I've made vegan cheese using lots of different recipes but this is by far the best. I use much less water than it says you should to melt the agar, so it comes out really thick, but it all blends up well and the end results are firmer. I also pour the cheese into silicone cup cake moulds because when they are set you can just pop them out and they have a nice shape for presentation. This chese is also nice with half a red pepper blended into it, or sun dried tomatoes or nuts! Great video XD.

  • is there any way to make this recipe without using cashews as I am allergic to all nuts and would love to try this.

  • How much do you pay for your Agar flakes? They are $100 per kilo here at my local health food store, ($10 per 100g) That's one expensive way to make uncheese....

  • Matt how much Miso do you use? is that the nutritional yeast? Cant find this miso in any shops here in UK RRR!

  • @MrEdwardwheeler My taste buds shouldn't have to adjust. I'm just going to eat things that actually taste good - like meat - so that my taste buds don't have to "get used to" food that tastes like shit.
