Sara Spelz, an employee of Scripps Newspaper Interactive Group and avid baker, prepares honey creme cookies, a perfect blending of sweet and salty. This video recipe is part of a collection of recipes from the "Stirring the Pot" series with Mary Constantine, based in East Tennessee.

RECIPE:
2 cups flour
2 teaspoon baking soda
2 teaspoon baking powder
1 teaspoon salt
1/4 cup sugar
1/2 cup butter, thinly sliced
finely grated rind of 1 large orange
1/2 cup honey

Filling:
1/4 cup butter, room temp, sliced
1 cup powdered sugar
1 tablespoon honey
1/2 teaspoon vanilla

Preheat oven to 400 degrees.

Sift the flour, baking soda, baking powder, salt, and sugar into a bowl. Add butter and cut in using a pastry cutter until the mixture resembles coarse crumbs. Stir in the orange rind.

Put the honey in a small pan and heat until just runny but not hot.

Pour over the dry mixture and mix to a firm dough. Shape the dough into 3/4-inch diameter balls. Place the balls on a baking sheet that has been lined with parchment paper, spaced well apart, and gently flatten.

Bake for 6-8 minutes at 400 degrees until golden brown. Let them cool and firm up before transferring to a wire rack.

To make the filling, put the butter, sugar, honey, and vanilla in a bowl and beat together until light and fluffy. Use the mixture to sandwich the cookies together in pairs.

Yield: 20 cookies
