皮絲薯條(10人份) Tofu Skin with Potato Slices (Serves 10)
材料Ingredients:
乾皮絲Dried Wheat Protein 110公克(g)
馬鈴薯絲Potato Slices 200公克(g)
紅蘿蔔絲Carrot Slices 60公克(g)
香菜Cilantro 40公克(g)

調味料Seasonings: 油 Oil 2大匙(Tbsp)
天然味素Vegetable Seasonings 1又1/2茶匙(Tsp)
鹽Salt 1/2茶匙(Tsp)
醬油Soy Sauce 1大匙(Tbsp)

作法Preparation:
1. 乾皮絲用熱水燙軟,擠乾水分,切條備用。1. Soak wheat protein in hot water until it's soft, squeeze out all the water and set aside.
2. 熱鍋放油加入紅蘿蔔絲及馬鈴薯絲翻炒數下,再加入皮絲一起炒熟。2. Add oil in a heated pan, add carrot slices and potato slices, stir, then add wheat protein and stir fry until done.
3. 加入調味料炒勻,起鍋前加入香菜翻炒一下即可。3. Add seasonings into the pan. Make sure it's mixed evenly, add cilantro, stir a few times then put everything on a plate and it's ready to serve.

Note: Soften wheat protein in hot water can lower its oil content. When cooked until soft, it's easier to absorb the flavor from seasonings.
※備註:乾皮絲用熱水燙軟,可降低含油量,煮軟後更容易吸收調味料的味道。
