i've tried this method of shaping but i cant "connect" both ends, somehow i ruin the cylindrical shape, i form wrinkles everywhere, so i just form a round ball, leave it to rest and then i make a hole in the middle and spin them with my finger in the air, it work fine so far, but i get some wrinkles on the inside. maybe i need a "hole maker" or what do you think about doughnut cutters ?

What brand of scale do you use? I try to pause it and read but my image isn't good enough. I'd like to find a nice sturdy metal-topped digital scale but the ones I see online look flimsy. Thanks.

do you put anything in the boiling water, ie malt powder?

I add some honey or any other syrup to the boiling water since it adds a nice subtle sweet flavor.
