Whether you are vegetarian or not, you're going to love this recipe. It's nutritious, delicious and so easy to make. It's one of those recipes that is quick and easy to prepare a day in advance, store in the fridge and then pop in the oven the next day for lunch or supper. The leftovers freeze great as well...just cut into squares of desired size and store in containers in the freezer, ready to pop in your lunch box for work. The other great thing about this lasagna, is that it tastes great hot or cold which can be handy if there is a long line up at the microwave at work.

I cover mine with parchment paper and then foil so you don't get the reactive effect.
