A traditional Moroccan chicken recipe made with spices, preserved lemon, olives, onion and smen, tender and full of flavor. /
Une recette traditionnelle marocaine à base d'épices, citron préservé, olives, oignon et smen, tendre et pleine de saveur.

Moroccan Chicken
Ingredients:
¼ cup olive oil
½ c. tomato puree
1 onion pureed
2 T. preserved lemons
1 t. mined garlic
Spices:
1 t. saffron
1 t. cinnamon power
1 cinnamon stick
1 t. ginger
salt to taste
½ c. chopped parley
½ c. chopped coriander
1 t. smen (Moroccan fermented butter)
Other:
bit of water
3 oz. olives
Combine olive oil and next twelve ingredients. Stir well. Add chicken and coat well with mixture. Add water, cover and bring to a boil. Simmer for 30 min.
Remove chicken and let drain. Place in a baking dish then place in a 420 degree oven until golden brown.
Meanwhile add olives to sauce and simmer till thicken.
Remove chicken from oven, place on a platter then cover with sauce. Garish with slices of preserved lemons and olives.
Serve and enjoy.

  • I made this for Eid, and let me tell you that i've made it again maybe 5 times since. Its so delicious and quite easy. I doubled your recipe with two broilers, and purchased bread from a local bakery and served with french fries as you mentioned in a previous comment. Every recipe I've tried from you has turned out perfect and I was quite proud of myself after all the comments from the dinner I took this to on eid. I always give you the credit though.
