Kinshasa, July 2, 2006.--This is Bi-Astrid, a Congolese Cordon bleu. To make this dish, you need: Wrapping leaves (a booming business, which raises biodiversity concerns, as this plant might end up disappearing); fish; plantains, and all the necessary ingredients as shown. Wrap the seasoned fish, boil it till cooked (you need experience to determine this). Boil plantains; pound it in a mortar; and slice it. This is agastronomic epiphany from Kisangani, eastern DRC, immortalized by the late ABETI MASIKINI in her famous song. (Languages: French and Lingala in background, and Swahili)
