I've heard a few versions of ; this corn bread recipe with Jiffy Corn Muffin Mix and Creamed Corn, and here is my recipe for a simple quick corn bread, using those staples of childhood, Jiffy Corn Muffin Mix and Creamed Corn.   • awesome vid. I like 2 boxes Jiffy, 1 14 oz cream corn, 1 6 oz mexi-corn, 1 cup sour cream and maybe some extra chiles. Mmmm

  • great cast iron find! I have loads of cast, but no pan that large, I want one! I get all mine cheap. Love the stuff for most cooking. That's no 8" pan lol, 10 at least but I think 12" #8 on the handle isn't inches. The cornbread looks great. Never thought or heard of putting creamed corn in it.

  • @omegahpla yeah, neat Lodge cast iron right on the street. not bad. and yes, i was confused by the numbers on the #8 pan. eric.

  • Hi Eric & family Good to see you . Unfortunately we dont have Jiffy or any other brand of Cornbread mix in Canada. Cornbread is not a staple here like it is in America.Yup, having it on hand to whip up some cornbread in a "jiffy" is great. & also added creamed corn ..sometimes canned or diced chili's too. Congrats on your awsome new cast iron "find". Good score ! Great video

  • Eric, you got trying all kind of new things, I picked up the jiffy corn bread mic and a can of cream corn tonight at the store.

    I've also done roasted corn on the cob on the grill, the best corn I've ever tasted, only hate cleaning off the silk when the corn is hot.  The first time I did this, I open up the lid of the grill and got a face full of steam, right then I knew it would be great.

  • Looks great! I remember I had tried two different recipes a while back. There was a standard recipe, and then the Mark Bittman recipe, and I liked Mark's better (with the sugar in it). This one looks good too, but would it be even more awesome with a bit of sugar added? Also, the best site about cast iron cookware is the one from "goodmorningamerica". Google "cast iron cookware" and it will be one of the first 5 links. I couldn't live without my cast iron pans.

  • to clean up before you season the skillet, make a bon fire in the backyard and toss your skillet in it. It will burn off all of the black goo, that is a old southern trick that my mother and grannie used to "freshen" up their cook pots.
