    It's a pregnant female - it doesn't have a "knob".

Others have already answered your question - it is taken to a breeding center so that most or all of its eggs will survive and become sturgeons. If it was left in the wild, most of the eggs would have died since survival rates in the wild are so low. Even worse, if fishermen who were engaged in the illegal caviar harvesting caught it afterwards, then no eggs will survive. Just be glad that good-hearted, educated fisherman caught this female and sent it to a breeding center.

If the Russians had caught it (Heilongjiang is also known as the Amur after all), then the eggs would have become caviar instead :(

Some fish can live out of water for long periods of time. Including this one. Their not as fragile as you may think.

Breeding center - via out of water in a boat, and then on the back of a truck.

They must not have realized that fish breathe water. That fish probably died.

below their jaw are those barbs/sensors.. in the west we believe that they have medicinal properties!!! we just need the very tip off of each, it's said to help grow back amputated limbs & replacement body organs, hearts, liver etc etc it's also said to help win the Lottery if rubbed in the armpits... There's NO scientific evidence to back this up but we're still paying poachers to catch, kill & hack off their faces untill they're all dead/extinct...
