Here is a recipe for this bread:
http://recipes.chef2chef.net/recipe-archive/56/295433.shtml

I love when bread makes that crackling sound as it cools. As you can see, it doesn't move.....
This is a good pagnotta (Italian country bread) made with a biga (starter). The crust is crunchy and the center soft.
I used about 20% - 25% whole wheat flour with the rest made up of swany white organic unbleached flour.

  • ALWAYS USE A BIGA......A STARTER...IT MAKES ALL THE DIFF

  • @dagnil4 No one would ever dispute that!

  • Thanks! :)

  • That looks a lot like the Italian Peasant bread I make (Pane Rustica). Could you send me the recipe so I may compare or let me know what book it came from.

    Thanks

    Mike

  • Hi Mike,

It's a standard Italian country bread recipe, so you probably already have it. Here are the ingredients: 1 1/2 ts active dry yeast 1/2 c warm water 7 c bread flour 1 tb salt 2 3/4 c cool water 1/4 c biga

    It's excellent bread.

    Sandy

  • @MJYebba pane rustica means rustic bread not peasant bread

  • @pakmanmanc It actually means country bread as per my grandmother.
