主料 / 鯛魚 1條、大草蝦 12隻、蛋液 1個、檸檬 2個、蔥 2支、紅辣椒 1支、香蒜粉 1小匙、黑胡椒粒 1小匙、吉士粉 1大匙
調味料 / 鹽 2小匙、糖 1大匙
做法:
1、檸檬取汁,草蝦去殼去沙腸,再由背部剖開成片狀。
2、鯛魚去骨去皮,切成薄片狀備用。
3、蝦片、魚片拌入少許鹽、黑胡椒粒、吉士粉、蒜香粉、蛋液或蛋清,抓馬入味。
4、魚片上疊蝦片,組合後入鍋中煎至酥香金黃,排盤備用。
5、紅辣椒、蔥切成絲,取一油鍋放入香油煮滾後,淋在蔥絲、辣椒絲上,將辣椒絲、蔥絲擺在蝦片上。
6、取一深鍋放入1碗水及適量的檸檬汁煮滾後,放入鹽、糖、吉士粉,勾芡煮成醬汁,淋在蝦片上,即可。
