SPOILERS!
He's been brainwashed by Ultimecia from the future and apparently it's his dream to be a Knight. At first she took over Edea's body until Edea passed her powers onto Rinoa. Ultimecia wanted Adel to merge with Rinoa to gain her power so then Ultimecia could take over Adel's body and destroy things.
