I live on the Mexican border; I moved here in 1977. So I've seen a lot of hat dances. I've never tried to do it -- I leave it to those who know how. But it's fun to watch.
I've been told that the origin of the music is Germany, Austria or somesuch German speaking area. A search on Bing proved inconclusive. Maybe someone can enlighten us all.
At any rate, it's an amazing dance to watch done by professional dancers. And it's fun for not-so professionals to dance to as well.
Of course the correct interpretation is really "Which they squeeze from one cow or an udder" - this song is crammed with pithy humour and spectacular rhyme. Where are the people who can write like this today? Oh yes - dead since the 70s. Come on you post modern lyricists - up your game.
When I came to YouTube this song was my very first search. I gave up but with the Wisconsin recall election yesterday and the lyrics "In Wisconsin they dance on fresh butta, Which they squeeze from one cow or anutta." I checked again. It seemed like I was eight years old all over again and sneaking into my parents album collection.
