I think it is slower because of the addition of several new applications and features. Especially at start up, the original has a lot less to load, while the new 3G one has other apps it has to load, especially on the homescreen.

Is the delay in accessing menus, etc due to the 2.0 software or the new 3G hardware?

That, and EDGE runs at Dial-Up speeds and 3G can be compared to DSL. 3G is much faster.
