In keeping with the philosophy of farm to fork live stock management that has produced some of the finest meats available, Cumbrae Farms is happy to announce the next step in the evolution of this idea: our very own Niagara Gold Whey Fed Pork.

Bred from a Yorkshire-Duroc cross breed, this pork introduces use to what pork is capable of being; well marbled, beautifully colored, and a tenderness that may well have been lost on us over the very recent years of industrially raised pork products.

Being fed grains and nearly 2 liters daily of whey, a by-product of Niagara Gold Cheddar secured from the Upper Canada Cheese Company, the milk from which the whey (the liquid remaining after milk has been curdled and strained; it is a by-product of the manufactured cheese) has been garnered from a herd of Guernsey cattle (known for their rich creamy milk) located on a picturesque farm near St. Anne, ON. The pigs are residing in Cayuga, ON and are being brought to a finished weight of 150lbs, slightly smaller than conventionally raised pork.

Feeding pigs whey is nothing new, in fact the Italians have been feeding it to their herds for years in order to produce what is widely considered the best Prosciuttos in the world. In keeping with this model of animal husbandry laid out for us to continue, Cumbraes is confident that you will find this to be some of the very best pork you will ever try. With plans to introduce 50% Tamworth genetics to the next herd, it will only evolve and get better.
