Making Salami at River Cottage with Ray Smith the Master Butcher while on a Pig in a Day Event.
We had a great day and would recommend it to anyone who loves pigs and pork, really interesting and very very friendly.

  • Thats especially true for Ray their butcher, what a great bloke and really knows his stuff. I went down again this year for smoking and curing and equally as good.

  • I really like River Cottage but it is a lot easier to lead the good life if you have a stream of well-paid city-dwellers ready to fund your lifestyle.

  • Certainly not a 'well paid city-dweller' just prefer to spend my hard worked cash on hobby other than drinkin' an' smokin'

  • People have to be paid for there labour .

    It would be nice if we could all do it for nothing or for pennies.

    £175 is cheap compared to alot of courses in charcutarie and butchering.

    Some cooking courses are £300 a day.

    At the end of the day you can't beat learning from a pro.

    A good teacher is worth a thousand books.

  • I got `Hugh and Ray`s Pig in a day` DVD and its really useful. I can rerun the complicated bits till I get it right. I also have adapted some of the techniques like soaking the bacon for half an hour before frying and it makes fantastic breakfast rashers.

  • I've just been to the smoking and curing course and it was FANTASTIC and worth every penny. I saved up for it. Simple

  • Good for you, Phil. The point below about £175 for the course does seem to exclude a lot of simple folk that HFW depicts as friends in his series. Fine if it's corporate entertainment or Jamie is footing the bill for 15. The River Cottage set-up looks pretty smart these days as a result. Good for Hugh and Rick Stein and Jamie (and Argos if they really have £6 clothes rails); they sell what people want.
