They mostly buy them live. Go to eastern markets in America, there's tanks of water of live fish, clerk catches by net for customer. Chicken, may break neck. Serve whole. Eat feet, neck, etc. Not live, won't buy. How they were brought up. The chicken raised for food so was going to bite it one way or another at farm or slaughter house.
We're a sanitized society. Mostly everything cleaned, gutted & pre-packaged.
Couldn't do it now, but as a kid, I helped clean chickens. I'm white American.
