  • After I get the bacon about half cooked I throw in some fresh mushrooms, diced onions and chopped garlic and continue cooking until the bacon is the way I like it. I also add some white wine and lots of Parmesan cheese when I add the pasta and eggs.

  • you should of kept more of the bacon fat. you needed one or two more eggs, since your pasta looked pretty dry, and also about a 4 oz ladle of pasta water would of helped. your cheese is pretty thick, you want it grated on the finest side, not shaved. NEVER USE CREAM, YOUR GOING TO RUIN THE DISH! not bad for an american but a few things you need to work on. also when you remove the pasta you should remove it directly from the pot with a pair of tongs without draining it. You always have cream in carbonara, wisk the cream and eggs together and cook up your bacon (and other ingredients together, I add cooked mushrooms, red capsicum [dell pepper] and spinach leaves) in a pan, the eggs won't scramble when combined with the cream, mix all your ingredients with the drained pasta ( the sauce will ensure enough liquid) and finally add in some parmesan cheese to melt, mix and serve. There's my two cents :)

    By the way I use fettucine.

  • that was alot of noodles i would have used 3 egg whites and one whole egg for that.

    also more cheese would be good for it also since its alot of noodles.

    and gratting the cheese helps but that dont matter as long as it melts.

    cool to see someone cook a classic italian dish who dosent act like a snob it looke good im hungry now!
