    these one when they are fresh they look very soft and spongy, but as the time goes its starts to become real thick like chum chum. You can adjust the shape suitable to your choice, in my case they puffed up more than what I expected. and one more thing do not try with maida, I tried it long time before and its a big mess, all efforts goes in vein even with small tea spoon of maida :( you may give this recipe a shot before trying anything else :) thanks, Have a good day!

  • @rinamiah If you ever go to a sweetshop in Kolkata, and you try out a Rosogolla and a Chum-chum one after another - you'll immediately notice the difference in their textures. Madhura's recipe will create excellent elongated rosogollas. But professional chum-chums have a much tougher consistency - supposedly achieved by adding maida to the paneer while making the dough. I am myself in the process of experimenting - I can comment further only when I get the proportions right myself.

  • @Kuttunkuttudu You're on the right track! Just try mashing the paneer a bit longer - till it becomes cohesive. Then it won't disintegrate anymore.
