Mate im an apprentice chef and it's always great to learn from people like yourself.. i had to fillet a snapper a bit bigger then that and it took a while.. now i know how to fillet it cleanly not missing any party of the flesh and those bones in the middle. you dont need to cut the rib bones flick the knife up then run down with the ribcage youll miss them. Im a professional filleter in a fish market. it takes us a max of 5 sweeps of a blade each fillet

Why do you keep switching knives? Isn't there just one knife that could work for everything? .....I mean I understand they have better control with each size...but I only want one knife!!

You need to have a knife that can cut through the larger bones. If you use your filleting knife to do this you will take the sharp edge off it and/or damage/chip the edge of it.

Yep, it is a Snapper - Pagrus auratus (formerly Chrysophrys auratyus). Common to Southern waters of Australia from Coral bay in Western Australia to Capricorn group in Queensland.
