I'm not a parent, but this might be a cool idea to try: why not make charts showing groups of veggies and what they do in the body? For example, one group could be veggies high in calcium, which helps build strong bones. Another might be vegetables high in vitamin A, which helps with night vision / eye health in general. Instead of, "eat this, it's healthy", it would be "eat this, it's helping your body do that". Older kids could run through the lists themselves, ensuring they get a variety. :)
