Fish was caught in water that was 15' deep max. Hardly deep enough to cause any stomach to "blow up".

You should never poke the organ coming out of the fish's mouth, b/c its actually the stomach. The swim bladder is behind the stomach, and should be deflated by a professional with a sterile hypodermic needle, through the fish's side. You meant well, but all the fish you poked probably died of bacterial infections from cutting their stomachs. Fish can return to depth without popping their swim bladders. Getting them off the hook as quickly as possible helps. So do weighted release devices.
