  • Yes! It can be made without rum, no problem. There was left over Rum and we needed to use it, Rum is plentiful in Dominican Republic and Haiti, so not being big drinkers, we used it in the banana omelet! It adds a wonderful kick to the flavor, but its not necesarry! You can also write Minguito at haitiup@gmail.com to get more AUTHENTIC Haitian Recipes! He can tell you how to fix Haitian beans and rice, or a nice shrimp dish. Just write him and tell him Deborah sent you there for some more ideas

  • Thank you so very much for taking out the time to make that comment! We had just got back from Haiti. It was a very somber experience, and we needed something to lighten up our mood. I love the passion and love that Miguito has when he talks about his country, and his dream for Haiti!
