31% chance and u still get it. once i tried, it said 83%, but i got caught

while you can only do this 7 or more times you can also go around stealing arrows and gold from guards!

The more gold you pay her at once the less chance you have of getting it back without being detected. So if you pay 4 times and she has 1200 it will be 0% chance of pickpocketing without being detected, however if you pay her once then there is more of a chance that you could steal your gold back without being detected.
