Penelope saying "Oh my God" at the sight of a pig carcass was funny.

I think it more liking that they did it for payment. Butchering a pig in my area costs over $50. They couldn't afford to pay for that.

I think the reason they swapped half their pig was so they would just have to eat pork for the next couple of months. Having the sheep gives their diet some variety considering at this point they still haven't produced enough from their crops.
