I'm italian and I can assure you using "tomato paste" is not considered "High cooking" at all. No tomato paste can substitute the traditional "sugo", expecially when doing "Ragù bolognese". But I think he used that tomato paste just to simplify the TV process... Also, pasta "De Cecco" in Italy is considered highly superior to Barilla one. At least for those who are really expert in pasta. I guess he advices "Barilla" because Mario is one of their partners.
@Exposethefrauds would you rather noone outside of Italy attempted to speak Italian? Would you rather all these dishes served with English names? Cheese in long snaky tubes - yum! *sarcasm* Embrace it for what it is...people willing to be imperfect while learning more about other cultures.
