【材料】:里肌肉4兩、鹹蛋黃4個、四季豆8支、蛋1個、紫菜2張、蔥1/3小匙、薑1/3小匙、酒1/3小匙、鹽1/3小匙、麵粉半杯、太白粉半杯
【做法】:
1、里肌肉切片後再切成約一公分寬度的長條狀,接著再加入鹽、酒、太白粉、少許水以及蔥段醃漬。
2、起一鍋熱水,加入少許鹽後再把四季豆下去川燙去除豆腥味,接著滴幾滴油增色後即可撈起備用。
3、取一片保鮮膜先舖在帖板上,接著把生的鴨蛋黃一切四塊後,取其中一塊放在保鮮膜一端壓成長條狀。
4、取一容器把雞蛋打入後打散加入少許水太白粉,麵粉後攪拌勻做成麵糊再倒入盤子中備用。
5、取一片紫菜平舖後,分別擺入四季豆、里肌肉條、生鴨蛋黃、接著邊拌邊沾上麵糊使肉捲固定。
6、起油溫約150-160度的油鍋,再把肉捲裹上麵糊,放入油鍋中低溫油炸;接先炸至外皮酥脆後先把肉捲撈起,此時轉大火熱油鍋接著再把肉捲放入再回鍋再一次逼出水份。
7、再把炸好的肉捲以斜刀斜切成塊,即完成這道好吃的相思肉捲。
