This video demonstrates how to bone a hind quarter of beef. Michael takes a systematic approach to show precisely the order of boning. Part Two covers the removal of the round, topside, silverside, and shin muscles.

  • Im a slaughterman/boner/slicer from the abbotoirs sector , Videos like this would be a most welcome to new workers. With every new generation of taught boners etc I see the quality is getting less and less, Hope to one day see vidoes of this quality shown in the near future. To bring back some pride to the younger ones.

  • I really appreciate this. I have a small onfarm shop (Saskatchewan, Canada) I raise lamb and am starting to do a few beef. The lady who wants to take over doesn't like the bandsaw- It can be done without using it as you have so clearly shown. Thanks lots Richard
