    first I cut off the skin and again to obtain stripes like a match (fiammifero = italian of match) more or less the same lenght of "penne" (pasta)

    for the inside of eggplant see the previous comment

  • the inside of the eggplant passed to the mixer after boiled with the same salted water used to cook the pasta
