so it's basically a question of peel. First I remove it more or less entirely and then I cut it into stripes, right?

first I cut off the skin and again to obtain stripes like a match (fiammifero = italian of match) more or less the same lenght of "penne" (pasta)
for the inside of eggplant see the previous comment

the inside of the eggplant passed to the mixer after boiled with the same salted water used to cook the pasta
