@that1870sguy The problem with that is, the bubbles need to stay together long enough to get to the table.

Yes, liquid lecithin works as well but it gives a wierd taste to preparations : /

If i want... can I do it whit 300 ml of lemon juice (can i also use any fruit juice?) and don't add water !? Will it be the same result ?

@PrincessTorte yes, you can use 100% lemon juice... just mind the very strong taste though!

@RobDaBankz Actually, we do not have a restaurant of our own, although we work with local chefs to offer local workshops. We are more into the retail business.
