Durga is an incarnation of the mother goddess, Devi, mother of the universe. Parvati is the wife of Siva and an incarnation of Durga. She has eighteen arms, most of them hold weapons to pretect against all sorts of evil. She slayed the powerful demon, Mahish.
If you like awesome sanskrit music and want to understand more of what it means, I highly recommend MC Yogi's Elephant Power album.

To the best of my knowledge: Durga is a Hindu Goddess, another form of Kali, the goddess who removes obstacles to love and liberation. You can find lots more information on Durga by searching online. Ma is used for the universal Mother, and the words "he" and "jai" are words of reverence and praise.
