Yields: 12 servings
Ingredients:
2 cups chocolate sandwich cookie crumbs
¼ cup butter, melted
1½ cups cold milk
2 (3.9oz) pkgs. instant chocolate pudding mix
1 quart mint chocolate chip ice cream, softened
1 (8oz.) container whipped topping, thawed
Preparation Directions:
~ In a small bowl mix together cookie crumbs and butter, set ½ cup aside for topping. Press the remaining crumbs into bottom of a 13 x 9-inch baking dish. Freeze until ready to fill.
~ In a large bowl whisk together milk and pudding mix, let set for a few minutes. Stir in ice cream. Pour over crust. Chill for at least 1 hour.
~ Spread with whipped topping and sprinkle with reserved cookie crumbs. Cover and refrigerate until frozen.
