Japanese rider, Kazuo (from Saitama Prefecture, Japan) towing a Uni-Go trailer in Northern New South Wales. We were on the return leg of a Brisbane - Sydney - Brisbane trip. This gives you a look at how a Uni-Go tracks, behind the bike. Kazuo is 66 years old, and as you can see, he tows it effortlessly. It is being towed behind a Suzuki GSXF1100 (1988 model).
Yes, it does track perfectly, providing it's set up right, and the bike's rear subframe is strong enough / the hitch used is rigid enough to deal with towing a single-wheeled trailer. (Note: Many conventional two-wheeled trailer hitches are not rigid enough for the role. ) A bike's rear subframe needs to be strong enough too.

Yes, it does track very nicely. Providing the rear subframe of the bike you tow it with is strong enough; the hitch you utilise is rigid enough; and the coupling's tensioner bolt is firmly done up and locked in place, it handles perfectly.
( The one featured was manufactured by Uni-Go NZ Ltd, in 2005.)
