Empanada or Quesadilla?

You won't be able to duplicate the Oaxaca corn tortilla called a 'blanda". The corn that makes the masa for this very large tortilla is unique to Oaxaca. Maseca just doesn't work. Though, Zarela Martinez does offer up a recipe for an approximate using fresh masa in her excellent cookbook.

Empanada implies that bread is involved but the word is used for these folded over treats. But when cheese is a component quesadilla is commonly used instead.

Empanar means "to cook or roll in bread crumbs". I've also heard empanizar used in Mexico.

U can get the cheese and tortillas easily. Just ask around until you find a person who imports them from Oaxaca. Just don't tell anyone where you got the cheese, cause it's illegal in most states to sell raw cow's milk cheese. The U.S. doesn't want you to properly digest cheese, choosing instead to pasturize the heck out of it, killing the good enzymes along with the potentially bad ones. Even calves die from their own mother's milk when it's pasteurized. food for thought.
