This was Bourdain at his best! My idol! ... but now? he's just a guy with a gut, eats too much pork, and drinks too much beer ... he sold out with "No Reservations" ... when a pasty white fat guy named Zimmerman passes you, it's time to either buck up or check out ... whatever happened to the vodka pounding, canary eating, no-bullshit Bourdain?! He's actually "animated" in this clip! Now he just ... schlumps along ... Oh, Tony ...
I understand what Anthony means. In the Italian restaurant I worked in, the best chef there was from Mexico.
It's in no way an insult, I think hes complimenting the skills of Mexican chefs.

he means there is a mexican man in the back of the resturaut (like in most resturants) that cooks in an great italian food for that resturaunt.
