if you look at the beginning of daisy circute when you dont unlock your mii luigi is with daisy and when you do unlock mii they are with daisy

If you're playing as a Nintendo character, the statues are of Luigi/Baby Luigi and Daisy/Baby Daisy. If you're playing as your Mii, the Luigi/Baby Luigi heads become two random male Mii's on your Wii and the Daisy/Baby Daisy heads become two random female Mii's on your Wii.

Daisy and Funky get picked because they have good stats. Funky adds speed/off road, and I don't know what Daisy adds.
