  • Thanks so much! I've used the recipe from Wild Fermentation by Sandor Katz, which is very similar. There is a surprising dearth of info on wild yeast soda making on the net.

    Some notes:

    1. Yes, guy. Please back off. The questioning method is a nice touch, but you undermine her authority.

    2. I used honey for the simmer stage and it came out great. It did NOT take one month. After two weeks, I had TONS of fizz. 

    Katz instructs to bottle right after adding the starter. I'll try yours.

  • Just a thought, if you're worried about your jar breaking put your cold water in it before you pour your hot liquid in..
