Queserías Villadiego (Poblete, Ciudad Real) ha dado un paso más en esa peculiar comunión de tradición y modernidad que la ha caracterizado desde el principio. Aquí, el arte de la elaboración artesanal quesera, los modernos criterios de comercialización para mercados cada vez más exigentes, el respeto por el medioambiente y una singular vocación divulgativa han fructificado en un proyecto sumamente atractivo para el buen aficionado. Y es que las últimas ampliaciones y mejoras en las instalaciones de Queserías Villadiego han convertido a esta empresa en un lugar único donde aprender y disfrutar de todas las sensaciones que ofrecen las fragrantes lunas de leche. En efecto, el ambicioso plan de ampliación y modernización que acaba de ejecutar Villadiego permite que el diseño de la quesería esté especialmente ideado para los visitantes, quienes podrán observar la elaboración sin interrumpir ni interferir en los procesos de lo que ya puede catalogarse como un centro de divulgación de la cultura del queso. Además, desde el punto de vista estético, se ha respetado la apariencia de la antigua finca y se han añadido guiños a la tradición en los toques de madera y en el acabado de los suelos y las paredes.
Villadiego estate is located beside the historical Cerro de Alarcos (Ciudad Real). It has a century tradition which has been taken up by Villadiego Cheeses to represent with honour the quality of the Manchegan Cheese under Designation of Origin.
The company has the secular experience to be immediately projected to the modern business attitudes in order to open up the home and the international markets. Actually, we are carrying out an expansion and modernization plan to introduce Villadiego in the most modern agri-foodstuffs. Although the cheese factory has still a low production, our Villadiego Cheese became celebrated for the press and also for the general public. It has been awarded with Gran Selección 2004-2006, Cofradía Del Queso Manchego 2003 and 2004, Expovicaman 2006, and Fercam 2006.
In Villadiego estate the cheese has been elaborated from raw sheep's milk since 1840. At the moment, the structure of the cheese factory installations, which maintains an exquisite and popular architecture, is simple and absolutely craft. The elaboration process includes the following stages: milk hygienization, renneting, dripping of curdled milk, moulding and pressing, curing, drying and maturation.
The matured and partially matured cheeses, always made from raw sheep's milk, are available in different sizes and formats, full cheeses, half and also vacuum-wrapped.
Our raw material, the milk, comes from our own livestock. The herd is brought up by our own workers, so they do not suffer long transports and adaptation periods either. Villadiego´s herd is registered in the Manchegan Breed National register and belongs the the AGRAMA (Asociación Nacional de Criadores de Ganado Ovino Selecto de Raza Manchega). To be listed in this Association means and exhaustive control in the milk production of each animal and involves a natural selection too in order to increase the breed and the quality production. At the same time the animals are treated according to a meticulous welfare protocol.
