  • Prof. Helen Leach is a food historian, specialising in New Zealand foods, so of course, she is particularly interested in the Pavlova story, I'd say if anyone could tell you the earliest confirmed recipe, it would be her, I got my information from her, and she was only too happy to help.

  • One last note and then I'm leaving the topic alone. A book review by Susette Goldsmith from the NZ Listener of "The Pavlova Story" comments that while the Australian version of Pavlova was attributed to Bert Sachse of Perth in 1935, a cake titled "Festival" being a Meringue cake (ie two meringues together) with cream, nuts and cherries was published by the NZ Dairy Exporter Annual in 1929.

    Forgive me, but I'm not a Pavlova fanatic to the point where I'll shell out money for the book ^^.

  • australianflavour. net has a good timeline on the development of "Pavlova" - bearing in mind that a number of different recipes at the time were named in an attempt to honour the dancer.

    On the whole of it, for accuracy purposes, I think that it could be said that the Meringue cake is NZs invention, and what we know as Pavlova is a variation of it.

    PS - Phar Lap wasn't stolen, he was purchased, by an American. If NZ wanted to keep him as your own you shouldn't have sold him ^^.
