My husband and I just made this, and let me tell u we did not like it. Now we are a family that loves vinegar and jalapenos, but the rice vinegar ruined this for us. The rice vinegar made the scallops taste like they were spoiled, and totally overpowered the citrus orange flavor. Not a good combination. But in all fairness to this recipe, we did not use raw jalapenos, or the sambal which was optional. We used a tamed jalapeno and sliced it. Maybe things will be better for u.
