Two things wrong here:
Stewing for 7-8 minutes? The caramelization process takes closer to 20-30 minutes.
Also, for one onion, that's a TON of balsamic vinegar and a disgusting amount of sugar.
The end result shouldn't be 'sour' at all. If it is, you put too much vinegar. It should just be sweet from the caramelization of the onion and salty from the salt you add. The result here just looks like half-cooked sauteed onions.
