Until now I did the burn and dodge thing on a new ( blank) 50% gray layer and set it to softlight.
The b&w thing is even more easier. Thanks Andy.

Thanks for the video. For one of my images, I used the channel mixer to get my monochrome layer and then hit it with some over the top punch. (Like 200 red, -50 each for red and blue). It really changed the look of my shot!
